1/4cButter or margarine
1lbIdaho Potatoes, peeled, grated and squeezed dry
1lgOnion, diced
1mdRed or green bell pepper, seeded and diced
1/2tsSalt
1/8tsFreshly ground black pepper

In a 1 2-inch skillet over medium-high heat, melt the butter. Add Idaho Potatoes, onion, and bell pepper and cook about 8 to 10 minutes, gently stirring the mixture every few minutes. Add the salt and pepper: cook until the potatoes are well browned on both sides and tender. (Makes 4 servings)
